- For the balsamic syrup, in a small saucepan cook vinegar over low heat until syrupy and reduced to about 3 tablespoons. Remove from heat; set aside.
- Coat grill rack with nonstick cooking spray. Preheat grill to medium (300°F to 350°F). In a small bowl stir together thyme, garlic, peppercorns and salt. Rub onto both sides of steaks.
- Place steaks on grill. Grill 6 to 7 minutes per side (145°F for medium-rare) or to desired doneness. Remove from grill, drizzle with balsamic syrup, and serve.
