Ingredients

  • 1 tbsp. olive oil
  • 1/2 cup diced onion
  • 3 garlic cloves, minced
  • Pinch crushed red pepper flakes
  • 2 tbsp. tomato paste
  • 1 (15-oz.) can diced tomatoes, undrained
  • 1 cup low-sodium chicken broth
  • 4 (5-oz.) cod fillets
  • 2 tbsp. chopped fresh basil

  1. Preheat oven to 350°F. In a large ovenproof skillet heat oil over medium-high heat. Add onion; cook 5 minutes or until softened. Add garlic, red pepper flakes and tomato paste; cook and stir 3 minutes. Add tomatoes and broth; bring to boiling and cook 3 to 5 minutes.
  2. Season fillets with salt and pepper to taste. Place in skillet and spoon sauce over fillets. Place skillet in oven. Bake, uncovered, 12 to 15 minutes or until fish flakes easily with a fork.
  3. Spoon sauce over fillets, sprinkle with basil, and serve.
