Ingredients

  • 1/4 cup light mayonnaise
  • 3 tbsp. sliced fresh basil
  • 2 tsp. fresh lemon juice
  • 8 slices whole grain bread, toasted
  • 2 ripe beefsteak tomatoes, sliced
  • 8 slices cooked crisp turkey bacon
  • 1 avocado, pitted and sliced

  1. In blender or food processor combine mayonnaise, basil leaves, lemon juice, and salt and pepper to taste. Blend until smooth; set aside.
  2. Toast bread slices. Spread basil mayonnaise onto bread while still warm.
  3. Top one slice of bread with sliced tomatoes, 2 strips bacon, and avocado slices.
  4. Top with second slice of toasted bread and serve.
