Ingredients

  • 2 lbs. boneless pork loin roast
  • 1 tbsp. salt-free Southwest chipotle seasoning
  • 2 large onions, sliced
  • 1/3 cup no-sugar-added apple butter
  • 2 tsp. gluten-free stone-ground mustard

  1. Preheat oven to 350°F. Sprinkle pork with chipotle seasoning. Place a large nonstick skillet over medium-high heat. Add pork; cook, turning to brown all sides.
  2. Place onions in a roasting pan. Place pork on top of onions. In a small bowl combine apple butter and mustard; brush on pork.
  3. Place pan in oven. Roast 40 to 50 minutes or until an instant-read thermometer registers 160°F. Remove from oven and let stand 10 minutes before slicing. Cut pork into thin slices, and serve with roasted onions.
