Ingredients

  • 1 1/2 lbs. boneless, skinless chicken breasts, cut into 1-inch pieces
  • 4 thick-cut smoked bacon slices, cut into 1-inch pieces (1/3 lb.)
  • 1 (15.25-oz) can pineapple chunks in juice, drained
  • 1/2 cup teriyaki marinade with pineapple juice
  • 2 bags boil-in-bag brown rice, cooked
  • 1/4 cup thinly sliced green onions

  1. In a large bowl combine chicken, bacon, pineapple and teriyaki marinade; toss to coat. Season with salt and pepper to taste. Refrigerate, covered, 15 minutes.
  2. Place skewers on grill. Grill, covered, 8 to 10 minutes or until chicken is no longer pink (165°F). Remove from grill.
  3. If desired, combine cooked rice and green onions, place skewers on rice, and serve.
  4. Preheat grill to medium (300°F to 350°F). Remove chicken, bacon and pineapple from marinade; discard marinade. Alternately thread chicken, bacon and pineapple on 6 (12-inch) skewers.?
